Happy Halloween-Eve Everyone!

On our recent trip to the mountains Brandon, Charlie and I stopped at this adorable little local lunch spot  Salt. This charming little spot serves local lunch/picnic style foods with local meats and veggies. We grabbed a few of their gourmet sandwiches and this Mediterranean Orzo Salad that Brandon liked so much I agreed to try to re-create it.


My plan was to make this cold pasta salad to keep in the fridge for easy healthy snacking but it didn’t last very long thanks to Brandon. I may have to make a double batch next time. This would also be a great dish to bring to potlucks, picnics or as a non-casserole dish for a meal train. This recipe is vegan friendly but I also think it would taste amazing with some feta cheese or even some chicken or shrimp on top!

Vegan Mediterranean Orzo Pasta Salad


Serves: 4

  • 1 cup Orzo Pasta
  • 1 cup sun dried tomatoes, chopped
  • 1/2 cup pine nuts
  • 1/2 cup arugula, chopped
  • salt and pepper to taste

Cook the orzo according to package instructions. Pour cooked orzo into a colander and run under cold water. Pour into your serving bowl and mix in remaining ingredients. Pour seasoned oil from the sun dried tomatoes a tablespoon at time until desired taste (I used 3 Tablespoons). Season with salt and pepper to taste. Chill for an hour and serve cold!
