Balsamic Braised Brussels Sprouts

Following this morning’s news that the WHO put out a report stating that processed meats like bacon and hotdogs are just as carcinogenic as cigarettes  you are probably thinking, well I’m doomed. We are fans of hotdogs and bacon in this house too (I mean, who isn’t). This report is definitely going to mean we are cutting down on processed meats and eating more plants in our diet, which is something we try to do regularly anyway. I suppose it’s just an extra push in the right direction.

Here’s some good news! Brussels Sprouts have incredible cancer fighting benefits! If you search the research databases you will find numerous studies showing eating brussels sprouts can actually prevent cancer development. Alright so let’s do our due diligence and do our best to offset our bacon consumption over the years (haha).

These brussels sprouts are like those delicious ones you get in a nice restaurant that you swear can’t possibly be healthy. Well here they are! You will love them!

Balsamic Braised Brussels Sprouts

Serves: 4

  • 1 Tablespoon unsalted butter
  • 1 lb medium brussels sprouts, trimmed and halved
  • 1 Tablespoon minced garlic
  • 3/8 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup unsalted chicken stock
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon unsalted chicken stock

Melt butter in a nonstick skillet over medium heat. Add brussels sprouts to pan cut side down. Cook 3 minutes, without stirring. Add garlic and cook for an additional minute. Sprinkle with salt and pepper and 1/4 cup chicken stock and cover partially. Cook for 3 minutes. Stir in balsamic vinegar and 1 tablespoon chicken stock and simmer for one minute. Remove from heat, serve and enjoy!

We served this with my Everyday Baked Chicken. I think it would be amazing with some fresh mashed potatoes too!

  1. Third bullet down says “1 tablespoon” with no ingredient. What’s missing? Is it the garlic? If so, a whole tablespoon?!

      Also, I buy the pre-minced garlic at the grocery store. Ours has it right next to the produce. That’s definitely the way to go

      Hi Rachel,

      This dish travels well. You can even just pop it in the microwave for 30 seconds if you want to warm it up a little but personally, I love the taste of brussels sprouts hot and at room temperature.
